    • One eggplant cut into 1/2 inch slices
    • Breadcrumbs - ½ cup
    • Parmesan cheese -½ cup

    • Eggs - 2
    • Herbs and spices - 2 teaspoon
    • Pepper - ½ teaspoon
    • Parsley -¼ cup
    • Olive oil
    • Salt

       

      Preparation

      1. Preheat the air fryer to 375 degrees F.
      2. In a large bowl, mix together breadcrumbs, Parmesan cheese, parsley and pepper.
      3. Spread some flour on a flat plate and keep aside.
      4. Beat two eggs in a bowl and keep aside. Set next to your flour and beaten egg bowls.
      5. Take eggplant slices and dip them into the flour. Afterwards dip the slice in egg and wait for any excess to drip off.
      6. Smear the eggplant slices with  breadcrumb coating on both sides.
      7. Set the coated slice on a plate or rack and repeat until all the slices are coated.
      8. Drizzle olive oil on the slices and arrange them in the air-fryer basket.
      9. Cook for 10 minutes in total, 5 minutes on each side, until golden brown.

      Airfryer Eggplant Cubes

         

        Ingredients

        • 1 large eggplant, chopped into 1 inch cubes
        • Avocado oil - 2 tablespoons
        • Dried rosemary - 1 teaspoon
        • Dried thyme - 1 teaspoon
        • Salt - 1/4 teaspoon
        • Garlic powder- 1/2 teaspoon
        • Smoked paprika - 1/2 teaspoon

           

          Preparation

          1. Place eggplant cubes in a large bowl.
          2. Drizzle avocado oil on the cubes and toss well.
          3. Add all the spices to the bowl and stir well.
          4. Place the eggplant in the air fryer at 400°F.
          5. Air fry for about 18 minutes.
